- 4 ears of corn, husked and grilled or 4 cups frozen corn kernels, thawed
- 1/2 cup Greek yogurt
- 1/4 cup mayonnaise
- 1/4 cup crumbled cotija cheese
- 1/4 red onion, finely diced
- 1 jalapeño, minced
- 1/4 cup fresh cilantro, chopped
- Juice of 1 lime
- 1 tsp chili powder
- 1/2 tsp smoked paprika
- Salt and pepper to taste
Instructions
- Grill the corn (or heat frozen corn) until slightly charred, then let it cool and cut the kernels off the cob.
- In a large bowl, combine the corn, red onion, jalapeño, and cotija cheese.
- In a separate small bowl, whisk together the Greek yogurt, mayonnaise, lime juice, chili powder, smoked paprika, salt, and pepper until smooth.
- Pour the dressing over the corn mixture and toss until evenly coated.
- Garnish with chopped cilantro before serving.
Notes
- For a dairy-free version, replace the Greek yogurt with plant-based yogurt.
- If fresh corn isn’t available, frozen corn can be used, just be sure to char it for the best flavor.
- Make sure the corn is cooled before mixing it with the dressing to avoid making the salad watery.
- For added heat, increase the amount of jalapeño or add cayenne pepper to the dressing.
