Description

This vegan spinach artichoke dip is a creamy, cheesy, and healthy alternative to the traditional version. Made without dairy, mayonnaise, or cream cheese, it uses vegan mozzarella and almond milk to create a rich, satisfying dip perfect for any occasion.


Ingredients

  • 1½ cups Vegan Mozzarella Cheese
  • 1 medium Onion, diced
  • 3 cloves Garlic, freshly minced
  • 1 (14 oz) pack Fresh Baby Spinach, rinsed and drained
  • 1 (14 oz) can Artichoke Hearts, chopped
  • 1½ cups Plain Almond Milk (or any other dairy-free milk)
  • Salt to taste
  • Freshly Ground Black Pepper to taste
  • ½ teaspoon Dried Basil

Instructions

  1. Preheat the oven to 400°F (200°C). Prepare a baking dish or a cast iron skillet by greasing it lightly with cooking spray or oil.
  2. In your prepared dish, combine the vegan mozzarella cheese, diced onion, minced garlic, fresh spinach, chopped artichoke hearts, salt, pepper, and dried basil.
  3. Pour in the almond milk and stir everything together until well combined.
  4. Place the dish in the oven and bake for 20 minutes, or until the dip is bubbly and the cheese is melted.
  5. Optional: Broil for 2-3 minutes to brown the top of the dip.
  6. Serve warm with pita chips, baguette slices, or fresh vegetables.

Notes

  • If using fresh spinach, make sure to wash it thoroughly to remove any dirt or grit.
  • You can substitute any plant-based milk for almond milk, such as soy or oat milk.
  • To add extra flavor, try topping the dip with vegan parmesan cheese or red pepper flakes before baking.
  • This dip can be made ahead of time and stored in the fridge for 2-3 days. Simply reheat it in the oven before serving.
  • If the dip becomes too thick, add a splash more almond milk to achieve the desired consistency.
