Scale
- 200g meringue or store-bought pavlova
- 160ml double cream
- 1 mango, peeled and sliced thinly
- 1/2 cup lemon and passionfruit curd
- 1 punnet of fresh raspberries
- 2 tbsp slivered pistachios
- Salade de fleurs (optional, for garnish)
Instructions
- Break up the meringue or pavlova into bite-sized pieces and distribute evenly into serving glasses or bowls.
- Peel and slice the mango into thin strips, then add to the glasses with the meringue.
- Spoon or pipe the lemon and passionfruit curd between the layers of meringue and mango.
- Whip the double cream to soft peaks and dollop generously on top of the mixture.
- Top with fresh raspberries, pistachios, and optional dried flowers for a decorative touch.
Notes
- Assemble just before serving to keep the meringue crispy.
- For a dairy-free version, substitute with coconut cream or almond-based whipped cream.
- If raspberries aren’t in season, try using other berries or even freeze-dried raspberries.
- For an added touch, drizzle honey over the top or sprinkle with edible flowers for extra flair.
