Description

Raspberry Eton Mess is the perfect summer dessert that combines fresh raspberries, whipped cream, and crunchy meringue. It’s light, easy to prepare, and a true crowd-pleaser, offering a refreshing balance of sweet, tangy, and creamy flavors.


Ingredients

  • 200g meringue or store-bought pavlova
  • 160ml double cream
  • 1 mango, peeled and sliced thinly
  • 1/2 cup lemon and passionfruit curd
  • 1 punnet of fresh raspberries
  • 2 tbsp slivered pistachios
  • Salade de fleurs (optional, for garnish)

Instructions

  1. Break up the meringue or pavlova into bite-sized pieces and distribute evenly into serving glasses or bowls.
  2. Peel and slice the mango into thin strips, then add to the glasses with the meringue.
  3. Spoon or pipe the lemon and passionfruit curd between the layers of meringue and mango.
  4. Whip the double cream to soft peaks and dollop generously on top of the mixture.
  5. Top with fresh raspberries, pistachios, and optional dried flowers for a decorative touch.
