  • 4 tablespoons cold butter

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9-inch square baking pan or line it with parchment paper.
  2. In a large bowl, whisk together flour, cinnamon, pumpkin pie spice, baking powder, and salt.
  3. In a separate medium bowl, mix the pumpkin puree, brown sugar, oil, maple syrup, and milk. Use an electric mixer to blend well.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined, being careful not to overmix.
  5. Pour the batter into the prepared pan and spread evenly.
  6. In a small bowl, combine the streusel ingredients and mix in the cold butter, pressing with a fork until crumbly. Sprinkle the crumb topping over the batter.
  7. Bake for 35-40 minutes or until a toothpick inserted into the center comes out clean or with a few crumbs.
  8. Allow the cake to cool before cutting into squares and serving.
