- 8 cups peeled and thinly sliced fresh peaches
- 1/2 cup granulated sugar
- 1/2 cup + 2 tablespoons all-purpose flour, divided
- 1 tablespoon cornstarch
- 2 teaspoons ground cinnamon, divided
- 1/4 teaspoon salt
- 3/4 cup packed light brown sugar
- 1/2 cup (1 stick) salted butter, room temperature
- 1 3/4 cup old-fashioned oats
Instructions
- Preheat the oven to 400°F and butter a 9×9 baking dish.
- In a large bowl, mix peaches, granulated sugar, 2 tablespoons flour, cornstarch, 1 teaspoon cinnamon, and salt until well combined. Transfer to the baking dish.
- In the same bowl, cream together brown sugar, remaining 1/2 cup flour, remaining 1 teaspoon cinnamon, and butter until a clumpy mixture forms. Add oats and mix until crumbly.
- Evenly distribute the oat topping over the peaches.
- Bake for 20–25 minutes until topping is golden and the filling is bubbling.
- Let cool for 10 minutes before serving warm, optionally with vanilla ice cream.
Notes
- Use firm, ripe peaches for best texture.
- Frozen peaches can be used if thawed and drained properly.
- Store leftovers in the fridge for up to 4 days in an airtight container.
- Reheat in the oven at 400°F or microwave individual portions in 30-second bursts.
- For a gluten-free version, use GF flour and oats, and increase cornstarch in the filling.
