Ingredients
Scale
- 2 chicken breasts, split in half widthwise (about 1 pound)
- Salt and pepper to taste
- 4 tablespoons salted butter, divided
- 5 cloves garlic, peeled and minced
- 3/4 cup heavy cream
- Fresh chopped parsley for garnish (optional)
Instructions
- Cut chicken breasts in half to make cutlets and season both sides with salt and pepper.
- Heat a heavy-bottomed skillet over medium heat and melt 3 tablespoons of butter.
- Add chicken in a single layer and sear for 4–5 minutes on the first side.
- Flip and cook another 3–5 minutes, until the chicken reaches 165°F internally. Remove and set aside.
- Remove skillet from heat, add the remaining 1 tablespoon of butter, and stir to melt.
- Add minced garlic and sauté for 30–60 seconds until fragrant.
- Pour in heavy cream and scrape up browned bits from the bottom of the skillet.
- Return skillet to heat and simmer the sauce for 1–2 minutes until slightly thickened.
- Add chicken back into the skillet and coat with sauce. Garnish with parsley and serve immediately.
Notes
- Use fresh garlic for best flavor—avoid pre-minced garlic.
- Have cream ready before sautéing garlic to prevent burning.
- Cutting chicken into cutlets ensures faster, even cooking.
- Deglaze with cream for a thick, flavorful sauce without flour.
