Ingredients

Instructions

  1. Prepare the dough by combining flour, sugar, and salt in a food processor. Add cold butter and pulse until mixture resembles coarse crumbs. Gradually add cold water until dough forms. Chill for at least 1 hour.
  2. Prepare the filling by tossing nectarine slices with lemon juice, granulated sugar, brown sugar, cinnamon, nutmeg, salt, and cornstarch. Let sit while rolling out dough.
  3. Roll out half the dough and line a 9-inch pie pan. Pour in nectarine filling and spread evenly.
  4. Roll out second half of dough and cover the pie, crimping edges to seal. Cut vents on top to release steam.
  5. Brush the top crust with milk or cream and sprinkle turbinado sugar over it.
  6. Preheat oven to 375°F (190°C) and bake pie for 50–60 minutes, or until crust is golden and filling is bubbling. Cover edges with foil if browning too quickly.
  7. Cool pie for at least 2 hours before serving. Serve with whipped cream or vanilla ice cream if desired.
