Ingredients
Scale
- 4 ½ cups all-purpose flour
- 1 cup unsalted butter, at room temperature
- ½ cup vegetable oil (or canola oil)
- 2 cups granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- ½ teaspoon almond extract
- 3 teaspoons cornstarch
- 1 ½ teaspoons baking powder
- ¾ teaspoon salt
- 20 red heart-shaped sprinkles
- ¼ cup Christmas-themed sprinkles or crushed candy canes
- 1 cup unsalted butter (for frosting)
- 3 ½ cups powdered sugar
- ½ teaspoon salt (for frosting)
- 1 teaspoon vanilla extract (for frosting)
- ¼ teaspoon almond extract (for frosting)
- 2–3 tablespoons heavy cream
- Neon green gel food coloring (as needed)
Instructions
- Preheat the oven to 350°F (175°C). Line 2 to 3 baking sheets with parchment paper.
- In a stand mixer, cream together the butter and granulated sugar until light and fluffy.
- Add vegetable oil, eggs, vanilla extract, and almond extract. Beat until fully combined.
- In a separate bowl, whisk together the flour, cornstarch, baking powder, and salt.
- Gradually add the dry mixture to the wet ingredients, mixing until dough forms. Adjust with a tablespoon of cream or flour as needed.
- Using a ¼ cup scoop, portion the dough and place on prepared trays. Flatten each into a disk about ½ to ¾-inch thick.
- Chill the shaped dough in the refrigerator for 15 minutes.
- Bake for 15–20 minutes or until edges are just slightly golden. Let cool completely before frosting.
- For the frosting, beat butter and powdered sugar together until creamy.
- Add vanilla extract, almond extract, salt, and green food coloring. Mix until well combined.
- Slowly pour in the heavy cream while beating until frosting is fluffy and smooth.
- Pipe or spread a thick layer of green frosting onto each cooled cookie.
- Top each with a red heart sprinkle and add Christmas sprinkles or crushed candy canes around the edge.
Notes
- Chilling the dough helps cookies hold their shape while baking.
- Use gel food coloring for vibrant neon green without altering frosting texture.
- Store cookies in a single layer in airtight containers in the fridge for up to 5 days.
- Cookies can be frozen for up to 2 months and thawed before frosting.
- Adjust almond extract to taste or substitute with more vanilla for nut-free preference.
