Description

This Fruit Pizza recipe features a soft and sweet brown sugar cookie crust topped with creamy cream cheese frosting and a colorful array of fresh fruit. Perfect for any occasion, this dessert is easy to make and incredibly versatile, allowing you to customize the fruit toppings based on your preferences or the season.

Ingredients

Scale
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup packed light brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1 (8 ounce) package low-fat cream cheese
  • 23 tablespoons maple syrup or honey (or 1 cup powdered sugar)
  • 1 teaspoon vanilla extract
  • Pinch of fine sea salt
  • Fresh strawberries, blueberries, raspberries, or any fruit of choice
  • Optional honey for drizzling

Instructions

  1. Preheat your oven to 350°F. Grease a quarter sheet pan, a 9×13-inch baking dish, or a 12-inch round pizza pan with cooking spray.
  2. In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
  3. In a large mixing bowl, beat the butter and brown sugar together until light and fluffy. Add egg, vanilla extract, and almond extract. Beat until fully combined.
  4. Gradually add the dry ingredients and beat until just combined. Be careful not to over-mix.
  5. Press the dough evenly into the prepared pan. Use a fork to poke a few holes in the dough to prevent it from bubbling up during baking.
  6. Bake for 15-18 minutes or until the dough is lightly golden. Remove from the oven and let it cool on a wire rack for 20 minutes.
  7. While the crust cools, whisk together the cream cheese, maple syrup (or honey), vanilla extract, and salt until smooth.
  8. Spread the cream cheese frosting evenly over the cooled cookie crust.
  9. Top with your choice of fresh fruit, and drizzle with honey if desired.
  10. Slice, serve, and enjoy!

Notes

  • To prevent sogginess, serve the fruit pizza immediately after assembly. Leftovers can be stored in the refrigerator for up to 48 hours.
  • Chill the dough for 10 minutes before pressing into the pan for easier handling.
  • Feel free to mix up the fruits used to suit your tastes or the season.
  • If using frozen fruit, thaw and pat dry before adding to avoid excess moisture.
  • If you prefer a lighter option, substitute the cream cheese frosting with vanilla Greek yogurt.
