- 1 1/4 cups Granulated Sugar
- 2 large Eggs
- 2 large Egg Yolks
- 1 tsp. Vanilla Extract
- 1 cup packed Brown Sugar (light or dark)
- 6 Tbsp. Softened Butter
- 2 Tbsp. Cinnamon
- 8 oz. Cream Cheese, softened
- 1/2 cup Unsalted Butter, softened
- 2 1/2 cups Confectioners Sugar
- 1 tsp. Vanilla Extract
- 1/2 tsp. Salt
Instructions
- Preheat the oven to 400°F. In a small bowl, mix the brown sugar, softened butter, and cinnamon to create the cinnamon sugar filling. Set aside.
- In a large bowl, whisk together the all-purpose flour, cake flour, corn starch, baking soda, baking powder, and salt.
- In the bowl of a stand mixer, cream the cold butter and granulated sugar for 1-2 minutes, until smooth and fluffy.
- Add the eggs, egg yolks, and vanilla extract, mixing until fully combined.
- Gradually add the dry ingredients to the wet mixture, about 1/4 cup at a time, mixing until just combined.
- On a lightly floured surface, flatten the dough into a large rectangle. Spread the cinnamon sugar filling evenly over the dough.
- Roll the dough from the long edge into a jelly-roll shape. Slice the dough into 12 equal pieces and form each into a ball.
- Place the dough balls on a parchment-lined baking sheet and bake for 9-11 minutes, or until the edges are lightly golden brown.
- For the frosting, beat together the softened cream cheese, butter, powdered sugar, vanilla extract, and salt until smooth.
- Spread the frosting over the cooled cookies and sprinkle with extra cinnamon if desired.

- Ensure the cinnamon sugar filling is sealed inside the dough to prevent it from oozing out during baking.
- Let the cream cheese and butter soften before making the frosting for the best texture.
- If you don’t have cake flour, you can substitute it with all-purpose flour (use 4 cups of all-purpose flour in total).
