Description

Classic Christmas Thumbprint Cookies made with buttery shortbread dough and filled with festive raspberry or apricot jam. These soft, chewy cookies are a nostalgic holiday favorite—perfect for cookie exchanges, gifting, or festive baking with kids.

Instructions

  1. Preheat your oven to 325°F (165°C) and line a baking sheet with parchment paper.
  2. In a stand mixer, cream together the softened butter, white sugar, and baking powder on medium speed until light and fluffy (about 3–4 minutes).
  3. Scrape down the sides of the bowl, add the egg, and beat until fully incorporated.
  4. Mix in the vanilla extract until combined.
  5. Reduce mixer speed to low and gradually add the flour. Mix until just combined—do not overmix.
  6. Roll dough into 1-inch balls and place them 1 inch apart on the prepared baking sheet.
  7. Gently press a thumbprint or use the back of a spoon to make an indentation in the center of each ball.
  8. Stir the jam and fill each indentation with about 1/2 teaspoon of jam.
  9. Bake for 20 minutes, rotating the pan halfway through for even baking.
  10. Let cookies cool for a few minutes on the pan, then transfer to a wire rack to cool completely.
