Description

Cheesy cauliflower bites are crispy on the outside, tender and cheesy on the inside. This low-carb snack is perfect for a quick appetizer, snack, or side dish. It’s easy to make, reheat, and full of flavor!


Ingredients

  • 1 medium head cauliflower (or 12 oz bag riced cauliflower)
  • 3/4 cup shredded cheddar cheese
  • 3/4 cup shredded mozzarella cheese
  • 1/2 cup breadcrumbs
  • 1 egg
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried parsley
  • 1 tsp smoked paprika
  • 1/2 tsp black pepper
  • 2 tbsp olive oil
  • For dipping sauce: 1/2 cup ranch, 1/4 cup buffalo sauce

Instructions

  1. Finely chop the cauliflower and steam for about 10 minutes, until fork-tender. Drain well.
  2. In a large mixing bowl, combine the steamed cauliflower, shredded cheeses, breadcrumbs, egg, and seasonings. Mix well.
  3. Lightly wet or oil your hands and form the mixture into small patty shapes, making about 12 bites.
  4. Heat olive oil in a skillet over medium-high heat. Cook the patties for about 5 minutes on each side until golden brown and crispy.
  5. Alternatively, bake at 400°F for about 15 minutes, flipping halfway, or air fry for 10-12 minutes.
  6. Mix together ranch and buffalo sauce for dipping and serve with the cheesy cauliflower bites.

Notes

  • Be sure to drain the cauliflower thoroughly to prevent the bites from falling apart.
  • Oil your hands before shaping the patties to avoid the mixture sticking.
  • For crispier bites, make sure to oil the pan generously or use an air fryer.
  • Leftovers can be stored in an airtight container for up to 5 days. Reheat in a skillet or air fryer.
