Description
Cheesy cauliflower bites are crispy on the outside, tender and cheesy on the inside. This low-carb snack is perfect for a quick appetizer, snack, or side dish. It’s easy to make, reheat, and full of flavor!

- 1 medium head cauliflower (or 12 oz bag riced cauliflower)
- 3/4 cup shredded cheddar cheese
- 3/4 cup shredded mozzarella cheese
- 1/2 cup breadcrumbs
- 1 egg
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried parsley
- 1 tsp smoked paprika
- 1/2 tsp black pepper
- 2 tbsp olive oil
- For dipping sauce: 1/2 cup ranch, 1/4 cup buffalo sauce
Instructions
- Finely chop the cauliflower and steam for about 10 minutes, until fork-tender. Drain well.
- In a large mixing bowl, combine the steamed cauliflower, shredded cheeses, breadcrumbs, egg, and seasonings. Mix well.
- Lightly wet or oil your hands and form the mixture into small patty shapes, making about 12 bites.
- Heat olive oil in a skillet over medium-high heat. Cook the patties for about 5 minutes on each side until golden brown and crispy.
- Alternatively, bake at 400°F for about 15 minutes, flipping halfway, or air fry for 10-12 minutes.
- Mix together ranch and buffalo sauce for dipping and serve with the cheesy cauliflower bites.
Notes
- Be sure to drain the cauliflower thoroughly to prevent the bites from falling apart.
- Oil your hands before shaping the patties to avoid the mixture sticking.
- For crispier bites, make sure to oil the pan generously or use an air fryer.
- Leftovers can be stored in an airtight container for up to 5 days. Reheat in a skillet or air fryer.
