Description

This Broccoli, Ham, and Mozzarella Egg Bake is a delicious low-carb breakfast option packed with protein, vegetables, and cheesy goodness. Perfect for meal prep and easy to make in advance, it’s a versatile dish that can be enjoyed by the whole family.

  • 6 cups chopped broccoli pieces
  • 2 cups diced ham
  • 1 cup grated mozzarella
  • 1/3 cup thinly sliced green onions (optional)
  • 10 eggs, beaten
  • 1 tsp. Spike Seasoning (or other all-purpose seasoning blend)
  • Fresh-ground black pepper, to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 9×12-inch casserole dish with non-stick spray.
  2. Bring a medium pot of salted water to a boil and cook the broccoli for about 2 minutes. Drain the broccoli well in a colander and set it aside.
  3. Dice the ham and slice the green onions. Measure out the grated mozzarella cheese.
  4. In your prepared casserole dish, layer the broccoli, ham, mozzarella, and green onions.
  5. Season the mixture with Spike Seasoning (or your preferred all-purpose seasoning) and freshly ground black pepper.
  6. In a separate bowl, beat the eggs and pour them evenly over the other ingredients. Stir gently with a fork to ensure the eggs coat everything well.
  7. Bake for 35-45 minutes or until the eggs are fully set and the top is lightly golden brown.
  8. Serve hot and enjoy! Leftovers can be stored in the fridge for up to a week and reheated in the microwave.
