- 8 slices bacon, cooked and crumbled
- 8 large eggs
- 1 cup whole milk
- 1/2 teaspoon salt

- 1/2 teaspoon dry mustard (optional)
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack or pepper jack cheese
- 1/4 cup green onions, chopped (optional)
- Butter or nonstick spray for greasing
Instructions
- Preheat your oven to 350°F and grease a 9×13-inch baking dish with butter or nonstick spray.
- Spread frozen tater tots evenly across the bottom of the dish.
- Cook the bacon until crispy, then crumble and sprinkle evenly over the tater tots.
- In a mixing bowl, whisk together eggs, milk, salt, pepper, and dry mustard until smooth.
- Sprinkle cheddar and Monterey Jack cheeses over the bacon layer.
- Slowly pour the egg mixture evenly over all ingredients in the dish.
- Top with chopped green onions if desired.
- Bake uncovered for 40–45 minutes, until the eggs are set and the top is golden brown.
- Let the casserole rest for 5–10 minutes before serving.

- Cover with foil if the top browns too quickly during baking.
- Swap in vegetarian bacon, turkey bacon, or sautéed veggies for variation.
