Description

This bacon, egg, and tater tot casserole is a comforting and easy one-pan breakfast perfect for beginners. Ideal for weekend brunches or make-ahead meals.

  • 1 (32 oz) bag frozen tater tots
  • 8 slices bacon, cooked and crumbled
  • 8 large eggs
  • 1 cup whole milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon dry mustard (optional)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack or pepper jack cheese
  • 1/4 cup green onions, chopped (optional)
  • Butter or nonstick spray for greasing

Instructions

  1. Preheat your oven to 350°F and grease a 9×13-inch baking dish with butter or nonstick spray.
  2. Spread frozen tater tots evenly across the bottom of the dish.
  3. Cook the bacon until crispy, then crumble and sprinkle evenly over the tater tots.
  4. In a mixing bowl, whisk together eggs, milk, salt, pepper, and dry mustard until smooth.
  5. Sprinkle cheddar and Monterey Jack cheeses over the bacon layer.
  6. Slowly pour the egg mixture evenly over all ingredients in the dish.
  7. Top with chopped green onions if desired.
  8. Bake uncovered for 40–45 minutes, until the eggs are set and the top is golden brown.
  9. Let the casserole rest for 5–10 minutes before serving.
