Ingredients
Scale
- 2 English cucumbers, sliced
- 1 large avocado, pitted, peeled, and sliced
- 1/3 cup green onion, chopped
- 2 Tbsp lime juice (from 1 medium lime)
- 2 Tbsp extra virgin olive oil
- 1 tsp sea salt (or to taste)
- 1/8 tsp black pepper
Instructions
- Slice the cucumbers and avocado, and chop the green onions.
- In a medium salad bowl, combine the sliced cucumbers, avocado, and chopped green onions.
- Drizzle with lime juice and extra virgin olive oil. Season with sea salt and black pepper.
- Toss the salad gently to combine all ingredients. Serve immediately.
Notes
- If preparing the salad in advance, add salt and lime juice just before serving to prevent the cucumbers from becoming too soft and the avocado from browning.
- To keep the avocado from browning, squeeze fresh lime juice over it right before mixing with the other ingredients.
- For a spicier kick, add finely chopped jalapeño to the salad.
- Regular cucumbers can be used instead of English cucumbers, but removing the seeds may help avoid excess water.
