Ingredients

  • 1 lb ground beef
  • 2 tbsp soy sauce (or tamari for gluten-free)
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 2 scallions, chopped
  • 1 tbsp rice vinegar
  • 1 tsp honey or brown sugar
  • 1 tsp sesame oil
  • 1 head Bibb or butter lettuce
  • Optional toppings: shredded carrots, sliced cucumbers, crushed peanuts, sriracha

Instructions

  1. Heat a skillet over medium-high heat. Add ground beef and break it up while cooking until no longer pink, about 6–8 minutes.
  2. Drain excess fat if needed. Add garlic and ginger; cook for 1 minute until fragrant.
  3. Stir in soy sauce, rice vinegar, honey, and a splash of water. Simmer for 2–3 minutes to let the flavors combine and sauce thicken.
  4. Remove from heat. Mix in chopped scallions and sesame oil. Adjust seasoning as needed.
  5. Spoon beef mixture into individual lettuce leaves. Add optional toppings and serve immediately.
