  • 1 onion
  • 4 garlic cloves
  • 2 cups apple cider
  • 2 tablespoon olive oil
  • 6 sprigs fresh thyme
  • 1 tablespoon apple cider vinegar
  • 2 teaspoon Dijon mustard
  • 1 teaspoon salt
  • 1 teaspoon brown sugar
  • ½ teaspoon freshly ground black pepper
  • 8 boneless skinless chicken thighs

Instructions

  1. Peel and roughly chop the onion and garlic. Add them to a large ziplock bag or container.
  2. Add apple cider, olive oil, fresh thyme, apple cider vinegar, Dijon mustard, salt, brown sugar, and black pepper to the bag. Mix thoroughly.
  3. Add the chicken thighs to the marinade, ensuring they are fully coated. Seal the bag and refrigerate for at least 4 hours (up to 24 hours).
  4. Preheat the grill or griddle pan to medium-high heat.
  5. Grill the chicken for 8 minutes on each side until a nice charred crust forms and the chicken is fully cooked through.
  6. Let the chicken rest for a few minutes, then garnish with fresh thyme and serve with lemon slices.

Notes

  • Marinating the chicken overnight will give the best flavor.
  • If you prefer chicken breasts, they can be substituted but will cook faster than thighs.
