Ingredients
Scale
- 1 onion
- 4 garlic cloves
- 2 cups apple cider
- 2 tablespoon olive oil
- 6 sprigs fresh thyme
- 1 tablespoon apple cider vinegar
- 2 teaspoon Dijon mustard
- 1 teaspoon salt
- 1 teaspoon brown sugar
- ½ teaspoon freshly ground black pepper
- 8 boneless skinless chicken thighs
Instructions
- Peel and roughly chop the onion and garlic. Add them to a large ziplock bag or container.
- Add apple cider, olive oil, fresh thyme, apple cider vinegar, Dijon mustard, salt, brown sugar, and black pepper to the bag. Mix thoroughly.
- Add the chicken thighs to the marinade, ensuring they are fully coated. Seal the bag and refrigerate for at least 4 hours (up to 24 hours).
- Preheat the grill or griddle pan to medium-high heat.
- Grill the chicken for 8 minutes on each side until a nice charred crust forms and the chicken is fully cooked through.
- Let the chicken rest for a few minutes, then garnish with fresh thyme and serve with lemon slices.
Notes
- Marinating the chicken overnight will give the best flavor.
- If you prefer chicken breasts, they can be substituted but will cook faster than thighs.
- For a smoky flavor indoors, use a heavy cast iron griddle pan and ensure proper ventilation.
- The recipe can be made ahead by freezing the marinated chicken and cooking later.
